2/3 cup butter
2/3 brown sugar
2 large eggs
1 1/2 cups old fashion oats
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1- 6 oz bag of craisins sweetened dried cranberries
2/3 cup white chocolate chips or chunks
preheat oven to 375*f
mix butter, sugar and eggs till light and fluffy
combine oats, flour and baking soda and salt to butter sugar egg mixture, mix well and make sure all is incorporated well. Drop by rounded teaspoonfuls onto ungreased cookie sheet bake 10-12 min or until golden brown makes approx. 2 1/2 dozen cookies
mix in cranberries and chocolate

My friend Robin made these for a party over the weekend and they were really good, and they have 3 ingredients! Can't make it much easier than that. So she challenged me to see if I could find some good 5 ingredients or less recipes for my blog. I am accepting her challenge and I will post them as I find them and try them out :)
INGREDIENTS
- 1 pound ground pork sausage
- 2 cups biscuit baking mix
- 1 pound sharp Cheddar cheese, shredded
DIRECTIONS
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine sausage, biscuit baking mix and cheese. Form into walnut size balls and place on baking sheets.
- Bake in preheated oven for 10 minutes, until golden brown.

This is a great fast and easy dish to make for breakfast or even dinner. This is usually my go to dish for coffee mornings with friends. This can be changed up as well. I have made it with mushrooms and sausage and it was good as well.
5 eggs
1/2 tsp. salt
1/2 lb. Swiss cheese, cubed
1 c. milk
Dash nutmeg
1 (9 inch) pie crust
1/2 lb. ham, cubed
Line pie pan with crust. Fill it with the ham and cheese, alternating layers. (This can be done ahead and refrigerated.) When ready to bake, mix together remaining ingredients and pour into crust.Bake at 350 degrees F. for 45 minutes or until knife inserted into center of quiche comes out clean. Serves 6-8.

I have no idea what this dish is called but someone shared it with me, its easy fast and the kids will eat it up!
*1 lb of ground beef, or turkey whatever you prefer
*1 small onion chopped
*1 lb of pasta any shape- cooked (don't over cook since it will continue to bake in the oven
*1 can of corn (do not drain juice)
*1 can of cheese soup
*1 can of tomato soup
*2 cups of grated cheese
*1 cup water
Brown meat with chopped onion, drain any liquid/grease
add soups, corn and water to meat
put pasta into a 13x9 baking dish
pour meat and soup mixture over pasta
top with cheese and bake for about 30 minuets at 350*

This is my own take on my grandmas fast and easy camping chili. The nice thing about this one is you can make as much or little as you need. I try to keep all these things in my pantry so that when I don't know what to make its there and I can just throw it together. You can make this on the stove top or in the crock pot.
*1 lb of ground beef
* 1 small onion chopped
* 1 envelope of chili seasoning
*2 cans of chili beans no meat
*1 can of kidney beans
*1 can of black beans
*1 can of great northern beans
*1 can of cannelloni beans
*1 can of stewed tomatoes
* a couple squirts of ketchup
Brown your ground beef and onion until no longer pink
open cans of beans and drain and rinse all BUT the chili beans
put beans, ground beef, tomatoes(do not drain tomato juice) and ketchup in large pot (or crock pot)
mix in chili seasoning
cover and cook on low for about an hour stirring every once in a while
on on low in the crock pot
serve with corn bread or biscuits, cheese and sour cream

I found this fast and easy recipe for chicken and dumplings. Ever since I was a little girl one of my favorite things that my Great Granny made was chicken and dumplings. Although these are no where close to being like hers, they were still good especially on rainy windy day!!
Ingredients:
3 cups shredded rotisserie chicken (about 2 1/2lb chicken)
1(10oz) can of cream of chicken soup
1 cup of chicken broth
1 cup whole milk
1/2 tsp of dried thyme
1/4 tsp ground black pepper
1 cup ass purpose baking mix like bisquick(or if you would like it to taste good try all purpose lol thanks for catching the typo Jenney, for the rest of you I fixed it then put it back per request of Jenney cause she thought it was funny, I told her I would compromise with her so here it is!)
1/3 cup of milk
in a large saucepan combine chicken, soup,broth, milk,thyme and 1/8 tsp pepper bring to a boil stirring occasionally over medium to high heat
In a medium bowl mix bisquick, 1/3 cup milk and 1/8 tsp of pepper just until moistened
drop dough 1 spoonful at a time into boiling chicken mixture, reduce heat to low and simmer uncovered for 1o minuets. Cover and simmer 10 minuets longer or until dumplings are done

It is such a great day! Rain, wind, candle going, pumpkin spice oil burning in the burner and the fireplace going *sigh* days such as this call for things like yummy soup! So today I am posting a yummy, easy and fast soup recipe! I have never tried this one in the crock pot but I think it you cooked it on low it would probably be just as good, just don't throw in your pasta until a bit before you are ready to serve it, you could also cook the past separately and then throw it in when your ready to eat.
3 Tbs olive oil
2 carrots peeled and chopped
1 small onion chopped
1 clove of garlic minced
1(26 oz) box of chicken broth/stock
1(15oz) can of cannelloni beans drained and rinsed
1/2 tsp of red pepper flakes
1/2- 1 cup of any small pasta
1/2 tsp of salt
1/2 ground black pepper
ground beef or Italian sausage also is good in this, as much or little as you like
*grated Parmesan if you like to go up on top
directions
warm the olive oil in a large soup pot over medium heat. Add the carrots onion and garlic and saute until sift about 2 minutes. Add the jar of marinara sauce chicken broth cannelloni beans red pepper flakes pasta salt and pepper. simmer for 10 minuets. Serve with grated Parmesan cheese on top
If you like your soup less thick (this isn't too thick my the way) add more chicken broth

Happy Monday everyone! The weather is delightful outside today! I have lots of cleaning to do so I thought I would post something fast and easy on days like this I especially LOVE to use my crock pot! A lot of you might have this one
but I will share it with you anyway :)
Fast and east Pot Roast
1 roast (every ones taste varies so choose whatever kind you prefer or have on hand)
1 can of Cream of Mushroom soup
1 envelope of onion soup mix
1 cup of Beef broth, stock (or water)
Put Roast in the crock pot
in a bowl mix soup, soup mix and stock
pour over pot roast
turn crock pot to low and cook all day
* you can add potato's carrots and onions to this as well!

I hope you have all had a great weekend!! I thought I would kick off the work week with a fast easy recipe. And yummy! I got this from a friend but changed it up a bit.
4 cups Rice (white or Brown, I usually use brown or whole grain)
4 Chicken Breasts, cubed (if your in a hurry rotisserie chicken works great and fast!)
1/4 TSP. Pepper
1/2 cup Oil
2 cans Cream of Chicken Soup
1/2 cup of Mayo
1 TSP. Mild Curry Powder
1 TSP. Lemon Juice
1 1/2 cup Grated Cheddar Cheese
Cook your rice according to directions
Saute Chicken in Oil and sprinkled with Pepper, about 6 mins. or until white.
mix soup, mayo, curry, lemon juice and cheese together
Add chicken and rice, mix thoroughly
Bake at 375 for 30 mins.

It seems that whenever I made chocolate chip cookies I get asked wherever did you come up with such a great recipe for these, and I actually had a mom in Jakes class try over and over and over again till she got them, almost quite right lol. I usually always was asked to bring them for any class parties etc. But there really isn't any secret at all, its just the recipe on the back of the Nestle Toll House bag. I only change up the butter. Instead of all butter I use half butter and half butter crisco. So here is the recipe Enjoy!
Chocolate Chip Cookies
Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup butter, 1/2 cup butter crisco
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
- 1 cup chopped nuts
Directions
PREHEAT oven to 375° F.
COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
